Ingredients
  

Caramelized Onions:

  • 1 tbsp olive oil
  • 1 medium onion, sliced
  • 1 tbsp balsamic vinegar

Burgers:

  • 1 lb ground beef, any variety of your choosing
  • 2 tbsp vegetable oil
  • 4 slices cheddar cheese

Grilled Pineapple:

  • 4 pineapple rings
  • 1 tbsp olive oil
  • 2 tbsp honey
  • 4 hamburger buns
  • tomato slices
  • lettuce slices
  • 1/2 red onion, sliced

Instructions
 

  • Heat 1 tablespoon olive oil over high heat in a large skillet.  When oil is heated, add onions and cook on high heat for 10 minutes, stirring constantly.  
  • When onions start to brown, reduce heat to medium.  Cook for 10 minutes, continuing to stir.  Add a pinch of salt.
  • Cook another 10 minutes on a medium/low heat, making sure that onions are not sticking to the bottom of the skillet.
  • Remove from heat and sprinkle onions with a small amount of balsamic vinegar.  Coat with the vinegar and set to the side.
  • Make 4 equal patties out of the ground beef.  Season to your liking with salt and pepper.
  • Take skillet that you cooked the onions in, spray with cooking spray.  Heat cooktop to a medium/high heat.  Brush each side with olive oil and cook for 4-5 minutes on each side.  In the last minute of cooking, place a slice of cheese on top of each patty to melt.
  • Combine honey and olive oil in a bowl and coat the pineapple slices.  While you grill the hamburgers, grill each pineapple slice for 3-4 minutes on each side.
  • To assemble burgers, take bun and put a piece of lettuce on it.  Top with burger patty and place onions then tomato slices then red onion.  Grilled pineapple is the last thing to add then close it with the bun.  Sometimes these can get messy so serving open-faced is an option.
