Ingredients
  

Fish Taco Ingredients

  • 12 small white corn tortillas
  • 1 ½ - 2 lbs cod
  • ½ tsp ground cumin
  • ½ tsp cayenne pepper
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil

Fish Taco Toppings:

  • ¼ small purple cabbage, grated
  • 1 medium avocado, diced
  • 1 plum tomato, diced
  • ¼ diced red onion, diced
  • ¼ bunch cilantro, chopped
  • 1 cup cojita cheese, crumbled
  • 1 lime, squeezed
  • 1 tsp garlic powder

Fish Taco Sauce Ingredients:

  • ½ cup sour cream
  • 1/3 cup mayonnaise
  • 1 lime
  • 1 tsp garlic powder
  • 1-2 tsp hot sauce, if desired

Instructions
 

  • Preheat oven to 375.
  • In a small bowl, combine cumin, pepper, salt, and black pepper.  Coat cod with seasoning.
  • On a shallow baking sheet, drizzle olive oil on cod.  Bake for 20-25 minutes.
  • While fish is cooking, combine all taco sauce ingredients, squeezing all the juice from the lime into mixture.  When well blended, set to the side (I like to put it in the refrigerator so it’s cold when we are ready to eat).
  • In a medium bowl, combine all the fish taco toppings and squeeze the juice from the lime into the mixture.  Mix well.
  • 2-3 minutes before fish is ready, take a cookie sheet and line it with the tortillas.  Bake in oven for 2-3 minutes.  This will give the tortillas more durability when you assemble the tacos.
  • To assemble: start with a piece of cod, top with toppings and sauce.  Or, I like to put the sauce down first, then the cod then toppings.
