Ingredients
  

  • 5-6 tomatoes, any variety
  • 4 garlic cloves, minced
  • 5-6 basil leaves, chopped
  • 1/2 tbsp balsamic vinegar
  • 2 tbsp olive oil, divided
  • 1 tsp salt
  • 1 tsp pepper
  • 1 loaf French bread

Instructions
 

  • Preheat oven to 350.
  • Bring a pot of water to a boil.  Using a knife, cut a slit in each tomato.  Once the water reaches a boil, take off stove and drop tomatoes in.
  • Fully submerge the tomatoes and leave in the water for 3-4 minutes.  This will allow you to be able to remove the skin from the tomato much easier.
  • Remove tomatoes from water and transfer to a cutting board.  Peel the skin off when tomatoes are cool to the touch.  Cut each tomato in half.
  • In a medium sized bowl, squeeze excess tomato juice out of tomatoes.  Get as much out as you can.
  • Dice tomatoes and place them into a bowl.  Add garlic, balsamic vinegar, 1 tablespoon of olive oil, basil, salt, and pepper.
  • Stir until well combined and set aside.
  • Slice French bread into small slices.  Using a kitchen paintbrush, coat one side of slices with the remaining tablespoon of olive oil.
  • Place bread, olive oil side down, on a baking sheet and heat for 6 minutes or until crispy.
  • Top with bruschetta mixture.
